this is driving me crazy and i can't find it anywhere. I know that some foods are actually enhanced by cooking... such as tomatoes and carrots. But what about spinach? Does it have more vitamins and nutrients to eat spinach raw? or to eat it when it is cooked?

I haven't heard that about carrots...and I've only heard that about canned tomatoes. The reason that happens is that the lycopene (an anti-oxident, if I'm not mistaken) is increased. Basically: I think spinach is healthier when it's raw (although I personally prefer to eat it cooked!).

IIRC, the iron is more readily absorbed when cooked.
