Seitan is not soy, has more protein than tofu, and has more texture and flavor too. It's easy and cheap to prepare at home, or you can buy it premade in the grocery store. You can ground it up to replace ground meat or make "meat" loafs, or slice it for stir fries or fajitas. Obviously, I highly recommend it!
