From "How It All Vegan" though I rewrote it here because I use a few different ingredients and since I do the instructions a little differently than they suggest in the cookbook...
2 1/2 cups flour (I use 1/2 wheat and 1/2 white)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 cup maple syrup
1/4 cup molasses - not blackstrap, just because I hate it!
1/2 cup oil
1 1/2 tsp dry powdered ginger OR 5 tbsp fresh ginger, grated (fresh is SO MUCH better)
Preheat oven to 350F.
In a large bowl, stir together the dry ingredients. In a seperate bowl, mix the maple syrup, molasses, oil and ginger. Stir in with the dry ingredients until "just mixed."
Spoon level tablespoonfulls onto a lightly oiled cookie sheet and bake for 12 to 15 minutes.
Makes 6 large cookies
