I like to make handrolls - mats and knives are too much a hassle. It may be difficult in the beginning, the rolls will spill and end up weird but with practice it becomes very easy -
1. Fold the seaweed in half, if it's fresh it should tear up easily and neatly without scissors. If it gets a bit soggy, set the toaster oven on low and warm it very very briefly to dry it up a bit.
2. Place seaweed on left hand (if you are rightee) fill left half of seaweed w rice, leaving a diagonal groove in the center "\\". Fill the groove w ingredients. My favorites include: cucumber, carrot, avocado, sprouts, daikon(turnip), cooked spinach, sesame, sunflower seas, jicama, apple, veggie ham... For variations, add a few dash of hot sauce.
3. Bring the lower left corner to the upper center point. continue to wrap the seaweed around to form a cone. You've got a veggie handroll!!
Also, instead of seaweed, you can use the tofu pockets called inari. They are sold in packets or cans. Just open them up like a little purse and fill w rice and whatever ingredient you like. Top with seaweed.
