Oh, never mind...I re-read Suesomon's post...I actually HAVE the nori...it's the bamboo mat I don't have! I wonder if I need that?

I made sushi without the mat. *shrug* I just rolled it. It came out great.

I like to make handrolls - mats and knives are too much a hassle. It may be difficult in the beginning, the rolls will spill and end up weird but with practice it becomes very easy -



1. Fold the seaweed in half, if it's fresh it should tear up easily and neatly without scissors. If it gets a bit soggy, set the toaster oven on low and warm it very very briefly to dry it up a bit.



2. Place seaweed on left hand (if you are rightee) fill left half of seaweed w rice, leaving a diagonal groove in the center "\\". Fill the groove w ingredients. My favorites include: cucumber, carrot, avocado, sprouts, daikon(turnip), cooked spinach, sesame, sunflower seas, jicama, apple, veggie ham... For variations, add a few dash of hot sauce.



3. Bring the lower left corner to the upper center point. continue to wrap the seaweed around to form a cone. You've got a veggie handroll!!



Also, instead of seaweed, you can use the tofu pockets called inari. They are sold in packets or cans. Just open them up like a little purse and fill w rice and whatever ingredient you like. Top with seaweed.

We love sushi, here is my fav recipe:

Sushi sheets seaweed (nori - dried not roasted)

grated carrot

avocado

cucumber

organic tamari

sliced cucumber in thin lengths

lie on seaweed then put grated carrot

use quarter avocado then slice in half

lie next to cucumber, add sprouts, sprinkle with tamari and roll up ,they are so yummy

you won't even miss the rice !

can also add a lettuce leaf or two! Enjoy!
