ok i know beans are healthy...does anyone have any simple recipes with them?

I always use canned beans because I'm very lazy, but I rinse all that slimy can juice off of them. I like to saute some black beans in jar salsa and roll them up in a sprouted tortilla. Or put garbanzo beans in a blender with some garlic powder, sea salt, tahini, and lemon juice and make hummus to eat on sandwiches, chips, and nan. One of my favorite easy-but-tasty recipes is to get a tube of refrigerator biscuits, smash them out flat, spoon some already seasoned canned refried beans in the center, fold over and seal shut with a fork, then bake according to biscuit directions. Instant empanadas!



Yeah I know these aren't really recipes, but they're completely season-to-taste.

I like to make the Pinnacle Peak Patio cowboy beans. Soak your beans according to package directions. When cooking add a can of green chiles, plenty of chopped onion and some dried oregano (1/2 to 1 tsp.) Cook until done. I often freeze these after cooking in meal size portions.



I use these and puree in the food processor to use in bean burgers. Or I like to wrap in a whole wheat tortilla with salsa, chopped tomatos, shredded romaine, some sour supreme and (until I went vegan) some shredded cheddar. I also puree them up and use as I would refried beans (although I usually just open a can of vegetarian refried beans...just so convenient!)



I have just learned to like beans...it's a texture thing. I never just sit down with a bowl of beans, but mixed with other things I love them.

I learned this in a Cuban restaurant-



Simple black bean soup



Cook them well, blend them with salt and run them through a sieve. Thin as necessary. Serve with Sriracha hot sauce squirted on top (and sour cream, if you're into it).

You could also try making chili, bean and pasta soup, burgers, loaves, curries, chana masala (spicy chickpeas in sauce), salads and soups with cannellinis etc... Let me know if you'd like me to post these recipes.

Beans are great. In my opinion it would be impossible to be a vegetarian without beans!



If you are just getting into beans, I suggest you start with Chili, which is really easy to make and tastes great. Just search for some recipies.



Here is a really simple and healthy beans & rice dish that I have made a couple times:

I make the odest thing ever....

I take white kidney beans and mix them into trader joes corn and tortilla chowder plus canned corn. Now you can make it soupy if you want to eat it out of a bowl or a little thicker-less chowder if you want to slap it in a wrap, so yummy!

Add them to veg*n chillies, in veg*n tacos, make spreads and dips for toast, etc.

'The Formula' can make a can of beans into many different dinners:



Saute one onion, chopped, in a saucepan with a little bit of oil

Add 1 can of tomatoes

Add 1 can of beans*see below

Add seasonings*see below

Heat until tomotoes are cooked

Serve over rice



*Beans and seasonings can be:

Chickpeas with curry powder for an easy curry

Black-eyed peas with paprika, oregano, garlic for a southern favorite

Navy beans with thyme, marjoram, parsley garlic for a easy cassoulet

Black beans with cumin, oregano chile powder for Mexican flavors
