I thought it would be a good idea for people to share what they bought to school or work for lunch.



I'm always looking for more packable lunch ideas.

I pack a lunch every week day for work, usually leftovers... but I'll still post... I would love ideas from others as well!

i dont pack for hubby he does his own ( i dont work so no lunches for me) so i will post what he takes.........although some might get grossed out.....LOL......its the combos!

tomorrows lunch is packed for him.



peanut butter and jelly sandwich on wheat bread.

leftover lasagne ( i used the basil tofu ricotta recipe from vegan with a vengeance and lightlife sausage crumbles)

cookies ( i think they are some kind of choc almond thing from Trader Joes)

I usually bring the same thing to work every day:



Salad - chopped cucumber, tomato, carrot, capsicum, mushroom, avocado, with hommus on the side. I'll usually have a few corn thins or crackers with that.



On a lazy day I'll just bring left-overs!

Here's what I have packed for tomorrow:



1 cup whole wheat pasta with 1 cup chunky tomato sauce



6 oz. raspberry soy yogurt and 1 T. ground flax



3 cups mixed greens salad with chickpeas, olives, cucumber, tomato, beets, carrot and red onion with 2 T. balsamic dressing

Mandarin oranges and peach cobbler yogurt. I have instant oatmeal if I get hungier. Usually I don't eat that much during the day.

For the man today I packed a veggie burger, some pan-fried quinoa and corn, some baby carrots, an apple and a banana. For the boys they got tofurkey sandwiches, pringles, apples, and carrots and 100% juice boxes.

Today I packed chickpea masala with roasted crushed potatoes, a large mango, a small bowl of soaked meusli topped with soy yogurt (for morning break) and some carrot sticks and cherry tomatoes (for afternoon break).

Today: Leftovers.

The concoction consists of annie's mac and cheese with sauteed soysage, onions, mushrooms, and peas. I'll probably bring along a luna bar and an orange, too. I can pick up a mediocre salad and a bunch of kale steamed in minestrone broth from work. That covers two meals and a snack for me. Today I work from 11-9pm with no breaks (I'm a waitress) .

Oh Icklebelly---chickpea masala sounds so good! I hadn't thought of revamping chicken masala. I am scrambling now looking for my chicken masala recipe so I can vegitarianize it! Thanks so much for the suggestion!(I love this board!)

Today I had a big bag of pseudo Chex mix (in other words I dump some Chex, pretzels, chocolate chips, and peanuts in a bag and mix it up), 10 baby carrots, and two peanut butter granola bars.



I'm packing dinner to go tonight so I'll post it here, too. I'm having homemade pizza (loaded with veggies and tofu "ricotta"), a big salad, and probably an apple or some carrots

Here's what I brought with me and had while at work from 7am-6pm:



1/2 a cup brown rice with 1/4 a cup peas, a handfull of chopped cilantro and 2 T cashews with 1 tsp. nutritional yeast and a splash of tamari



1 cup mixed rye, oats, barley and quinoa (cooked in enriched unsweetened soymilk) with 1 cup raspberries, 3 T. sliced almonds and 1 T. ground flax



1 cup baby carrots



6 cups salad of spring mix greens, spinach, arugula, cucumber, tomato, green beans, chickpeas, black olives, green apple and grapes with 3 T. balsamic dressing and 2 slices kalamata olive bread



1 cup artichoke-quinoa-lemon-garlic stew

This is a great idea for a thread, because I'm feeling really uninspired lately. I used to take veggie sandwiches fairly often, but I can't bring myself to make one in the morning these days.



No one said it had to be inspiring, so...



Yesterday I took Amy's frozen Tofu Mattar. It was really good-- probably one of the best frozen dinners I've ever had.



Today I ate out.



Tomorrow will probably be leftovers-- either red beand and rice, or Italian style stuffed zucchini (stuffed with whole wheat elboes, tomatoes, zucchini pulp, basil, and pine nuts).
