hey there...i am desperatley seeking some ideas for vegan meals for one as my hubby is going out of state to work so i will be cooking only for myself the next 8 weeks or so! help!

I bought recently a couple cookbooks that were geared for single cooking, or at least making food for two, and I freeze the other. We have a thread open on it. One was called vegan cooking for one, and maybe someone else can help me remember the title of the other.

umm, i just did a search for * vegan cooking for one* and didn't come up with anything! is this under the recipes and food disussion thread? (I am looking for quickie recipe ideas not cookbooks btw!)

How about easy stuff like instant rice and stir fried veggies/tofu?

Or even make up some marinated veggies and use as needed for fajitas. I love tofu scrambles/omelettes in the mornings. Bean burritos are easily made for one. You can but salad mixes and throw in veggies for a salad. Even though I live with my fiance, we rarely eat the same thing. He does love the tofu omelette/hash brows breakfast I make (not my recipes, though). I told him last night we were having that for breakfast and his eyes got that real far away look and he said, "Really?!" It really tastes like eggs! You can even give it an eggy flavor with Black Salt, available from Middle Eastern Grocers.



I make up Goodie Burgers and freeze them. Good stuff, I will post the links....

Pot Pies ! All you need is a lentil/seitan stew base and some veg*n pastry and a small cereal bowl or a soup cup (the big coffee cup style).



You fill the mug/bowl with stew and top it with pastry - whack it in the oven and you have a single serve pie. Mmmm

My favorite meal is marinaded tofu that I stir fry with some vegetables and serve it over pasta, but you could eliminate the pasta if you wanted. Since it is so hot right now, I have also been making a lot of fruit salads and eating them with granola. Smoothies too (another hot weather staple).
