What do you like to eat most mornings? Right now I am really into veg sausage and tofu scramble with cheese on a toasted english muffin or oatmeal with apples, raisins, cinnamon and brown sugar or just cinnamon and brown sugar. Anything else I eat never seems to stick with me that long. What does everyone else eat to start thier mornings off?

I love whole wheat english muffins with natural pb. So tasty.

I also love a toasted ww sandwich with veggie sausage and honey(if you eat honey).

I also like mixing cottage cheese, a little sugar, cinnamon, and vanilla extract and using it as a fruit dip.

It all depends on how much TIME I have in the mornings...

I LOVE pancakes (as someone mentioned above) and when I'm visiting my sweetie he always makes the most WONDERFUL ones, usually with raspberry sauce 'cause he knows that's my favorite......

Tofu scramble ("tofu eggs" as my 6 year-old calls them) with home fries (or fried sweet potatoes). I season the tofu with nutritional yeast, India black salt and pepper. YUM!

Fruit smoothie with blended silken tofu, frozen fruit and/or soy yogurt. We tend to do these a lot on school mornings.

Oatmeal with pecans, flax meal, frozen berries and coconut.

"Breakfast burrito" with vegan sausage or beans, potato, tofu "eggs" and salsa.

Sounds WEIRD but toast with peanutbutter and then applesauce poured over all of it... yummy!

I mostly have fruit for breakfast. I usually eat fruit all morning. Whatever I have in the house. We keep bowls of all types of fruit in the kitchen at all times. Sometimes it's smoothies and other days, just plain fruit. My smoothies are all whole fruits and greens in a vit-a-mixer. I don't add protein powders.

On Sunday.....It's tofu scamble with sliced tomatoes & sprouted toast.

If I want something other than fruit during the week and sometimes I do...It's oatmeal with a little maple syrup or toasted sprout bread with some type of seed or nut butter and a banana. I'm easy and I like simple food.

When I first tried to go vegetarian i was a McDonalds breakfast burritto vegetarian meaning I didn't eat any meat, eggs or dairy unless it was a McDonald's breakfast burritto.

Yeah then I found veggie sausage and started making my own. Breakfast burrittos rock on so totally!!!

I love breakfast and I could eat breakfast three meals a day

My usual morning meal is Cinnamon Life Cereal mixed with Fiber One cereal and Vanilla Soymilk

I also like oatmeal made with vanilla soymilk.

On the weekends when I have more time, I will do an omlette with veggies and toast.

I always have a glass of soy (or almond) milk every morning, sometimes hot cocoa, a fruit smoothie, w/ decaf coffee, w/ oatmeal or cereal, etc. I have fruit every morning too, my mom puts out a plate of a bunch of different fruit for me.

On weekdays:

-Bagel w/ nut butters and EB

-Oatmeal w/ fruit, dried fruit, nuts, flax, and whatever I feel like putting in it. I like it best with almond milk

-English muffin w. nut butter and EB

-Toast with nut butter and some soup

-Granola or other cereal with almond milk

-Black bean burger on a bun w/ salsa

-PB and banana sandwich

-Refried bean burrito

-Grilled hummus sandwich

Weekends:

-Something listed above ^^^ if I don't feel like making something

-Pancakes w/ maple syrup, I made cranberry pancakes today-delicious

I don't like to eat plain pancakes, I always make them with fruit, dried fruit, choc. chips, bananas, etc

-French toast (vegan of course!)

-Tofu scramble-here's a pic of my tofu scramble- https://www.veggieboards.com/gallery/...p?i=6227&c=506

-Grilled Veggie/hummus sandwich with lots of different things in it

-Muffins/bread/baked goods

-Bean/veggie stirfry with salsa

-Polenta/bean/veggie stirfry with salsa

Tofu scramble of course...

But what I really love is frying some potatoes that were baked potatoes from the night before. Just cube them and toss them in oil for a few minutes. So good.

Most of the time I'm rushing in the morning, so I pretty much stick with cold cereal with banana (when I have it) and rice milk.

I used to like Morningstar Farms breakfast sausage, but they're not vegan, so I don't buy them anymore.

I have been on a refried bean/potato/rice burrito kick lately w/ tons of hot sauce. A great way to fire up the morning!

However, I usually have cereal + soymilk w/ a fruit smoothie or pb on toast w/ a smoothie.

I still have never tried scrambled tofu in my 2 years of being a vegetarian! Sheesh-I gotta get on that!

hot whole grain and flax cereal with healthy balance and dried fruit

coffee with almond milk

I'm not a big breakfast person, I can't stomach eggy-type stuff in the morning or anything sweet. I absolutely abhor anything with maple syrup on it. So basically I eat to jump start the metabolism. I found that when I didn't eat breakfast (which was years and years) I was feeling sloggy and it only got worse once I stopped eating meat. Let's see....yep that went on for 5 years? ACK! It was my husband, an omni, that reminded me to boost my metabolism in the morning, and I would feel better all day. Heh whaddyaknow? He was right. I'm not up all night anymore, I'm HUNGRY again and I don't feel tired all the time. (Bet you didn't ask for ALL THAT did ya?)

My kids will beg and beg for this every weekend morning; I have to bake a bunch of potatoes Friday night to stay "stocked up" for the weekend...

(I add fresh parsley and garlic too... yum..)

Right now Smartmenu veggie sausage (which is funny because when I was an omni I hated sausage, but without the greese it tastes so good) or fresh strawberries, or fruit leather.

Right now I am eating baked oatmeal (I make it ahead of time and eat it for a few days) and veggie sausage patties most mornings. Sometimes cereal if I feel too lazy to reheat the baked oatmeal.

I work third shift so I don't really do "breakfast." I guess I do but it's not at a conventional time, I just have it whenever. I'll sometimes snack on dry cereal (usually Kashi Go Lean Crunch or Special K with Berries), or I'll have a packet of oatmeal, or I'll make a smoothie.

It cuts the cooking time and taste better. All good restaurants who make there hash browns or cottage fries (cubed potatoes) from scratch, do it with cooked potatoes. You get a superior end product .............Plus they get crunchy.

It's the same principle as fried rice. You have to make fried rice with left over cold rice or it just doesn't turn out right. If the rice is fresh and warm, it turns to mush.
