Help!!! My boss is diabetic and I want to make him a cake for his first diabetic birthday,and his 50th b-day(ouch). The only thing is, I don't want to make anything with eggs and milk in it since I would not want to buy these things. True, I could always buy him the pound cake and strawberries (an allowed diabetic dessert in moderation), but I want something I can put candles in... Any ideas?

Well, I don't know about the sweetening, but subbing milk and eggs in a cake is very easy For the milk, just replace with any grain or nut milk with a nice flavor. For the eggs, take 1 heaping Tbsp. soy flour + 1 Tbsp water to sub for each egg, they can all be replaced this way. The final product will be a really yummy vegan cake, and no-one will ever know the difference. A diabetic cooking website will probably have some pretty good cake recipes that you can modify in this way with excellent results
