We had this for dinner last week. It is delicious!!

8 large russet potatoes, peeled and thinly sliced, layer in a lightly oiled 9x13 baking dish, sprinkling each layer with about a Tbs of flour and salt and pepper to taste (except on the top.)

3 cups soy milk

1 medium onion cut into chunks

1/4 cup nutrutional yeast

1/2 tsp/ salt

Combine the above ingredients in a blender and pour it over the potatoes. Cover and bake at 375 for an hour. Uncover and bake for 30 minutes more.

You can add tvp, mushrooms, onions, or whatever else you want between layers.

I swear no-one would know it was vegan. It was thick and creamy and yummy!!

Well, i just put this together and threw it in the oven. I ended up having to use 10 potatoes to finish the last layer and i threw in 4-5 small garlic cloves in the blender with the rest of the stuff. THANK GOD for the mandolin!

I let you know if it's a thumbs up or the" finger"

Oh hell yeah! pickle, i love you, these are sooooooo good! I turned the broiler on for the last 5 minutes to give'em a little color and crispness. I'm gonna have fun eating leftovers for the next couple days. I ate them with a gardenburger slathered in gravy and some steamed veggies. I think i have to go lie down now , i'm stuffed
