We had this for dinner last week. It is delicious!!
8 large russet potatoes, peeled and thinly sliced, layer in a lightly oiled 9x13 baking dish, sprinkling each layer with about a Tbs of flour and salt and pepper to taste (except on the top.)
3 cups soy milk
1 medium onion cut into chunks
1/4 cup nutrutional yeast
1/2 tsp/ salt
Combine the above ingredients in a blender and pour it over the potatoes. Cover and bake at 375 for an hour. Uncover and bake for 30 minutes more.
You can add tvp, mushrooms, onions, or whatever else you want between layers.
I swear no-one would know it was vegan. It was thick and creamy and yummy!!
