I ate some leftover spaghetti squash for lunch and I just had one of those gushy veggie moments where I'm in love with my food (well, it makes sense to me)...or maybe it's b/c every day I see my co-workers eat really crappy food (animal parts aside) and I feel good that I'm injesting such healthy deliciousness...

Anyway...

I love squash Spaghetti and zucchini/yellow during the summer...butternut and acorn during the winter...I put butternut as my favorite b/c I think it's most versatile (for me)...curried soup, chunks in a stir-fry, mashed with maple syrup...

How about any of you?

Cheers!

Everything in the squash family is my personal fav.

Zucchini, chayote, crook-neck (yellow), mexican and patti-pan are great summer varieties.

Delicatta, butternut, sugar pumpkin are among the winter squash kings.

Me loves me squash.

Squash is wonderful stuff. I like all the ones I've had, though I prefer the orange-fleshed winter squashes to the pale summer ones.

They were one of the first food crops grown in the New World, too.... like 9000 years ago. All hail the Mesoamericans! Thanks to them, we have pumpkin pie and stuffed zucchini!

Seeing as how I'm struggling to be vegan, I'll pick butternut squash, b/c I love anything with butter in it as long as it's vegan.

I've only eaten yellow squash and zucchini from the choices listed. I'm quite sure I'll be trying the others, because I need/want to have a larger variety of vegetables to choose from.

Of those listed Butternut is my favorite. Although, this time of year grilled zucchini and yellow squash are divine.

I have a love/hate relationship with squash. Some days it really doesn't appeal to me, but if prepared correctly (usually not by ME) then I love it.

I need to broden my squash horizons. I've only had butternut squash and only just plain. I really want to give Spaghetti Squash a try!

And you left out pattypan squash, hubbard, kabocha, turban, delicata and a host of others that I like even better than those listed...

I love all squash so it's a tough choice but I picked butternut as my fave.
