I'm having veggie scramble mixed with leftover rice and beans.



I might even heat up some tortillas to go with this....

I had a salad with tomatoes, cranberries, feta cheese and balsamic vinegar dressing, a veggie burger with cheese and oven fries. For dessert I had a low fat/heart healthy orange ice cream bar.

Well,i made spinach stuffed tomatoes and crispy tofu.(a tofu recipe from here)It was really yummy and I'm stuffed!!

I had a salad with spinach, radishes, scallions, tomatoes and grilled seitan. With pita bread on the side. Finished it off with some vegan mint crunch chocolate. I debated opening a can of salad beans to toss into the salad, but I was too lazy to do it.

My creativity in the kitchen and effective decision making skills at the grocery store have been lacking lately. The past few nights I've been throwing together this big mess-o-something that involves varying combinations of basmati rice, mixed frozen veggies & garbanzos, chopped up TJ's Soy Nuggets and some TJ's General Tsao's sauce. Not a bad flavor, but it's just so "Campbell's soup and potato chip casserole" .....

I had one veggie burger and eggplant "caviar" spread. I was given corn but had had so much watermelon and hikima (sp?) that I was stuffed.

Its 3am, and iv just had a bowl of corn flakes, with rhubarb...ye ye, i know its not dinner time, but...still it was healthy...and it tasted fab....with yummy soya milk.......

OMG...iv just had/still eating a Tofu & Coconut Stir Fry. Made by hand...not bought I cant begin to explain HOW GOOD it was. I dont really like stir frys as a rule, but that was................ooooooooooooooooooooooooooooooo oooooooooooooooooooooooooooooooooooooooooooooooooo oooooooooooooooooo.........*warm glow*

Last night was Lemon-Scented Asparagus Risotto. Tonight will be something involving broccoli, since I've got a whole mess of it to use up. Maybe Cheezy Broccoli Rice Casserole.

I had beanie-weenies...WestBrae vegetarian baked beans and Tofu Pups (pretty good considering it's not all that culinarily sophisticated ) and zucchini fries...



I sliced up the zucchinis "fry"-style, let them weep, lightly breaded them, and baked them. I probably at a whole zucchini with the Tofutti dill dip I made.
