Quick question about storing prepared tofu! - VeggieBoards

For the first time I finally decided to make my own homeade tofu burgers. The recipe basicaly has tofu, tahini, bread crumbs, onions, wild rice and a plethora of spices (I sort of just made it up as I went along, I was trying to recreate the vegan tofu/4 grain burgers they sell at Whole Foods). They turned out great and were only a fraction of the cost of frozen/fresh vegan burgers.



My question is: how long can prepared tofu burgers last in the fridge? I looked everywhere but all I saw in terms of advice for storing tofu was when it was still in block form in the water. I made 7 burgers and think I might just have to freeze some if they won't last all week in the fridge. They have already been cooked in patties on a skillet.



Any suggestions? I really am new to this!

They might last all week, but it would be a good idea to freeze the ones you're not going to use today or tomorrow, and just reheat them in the oven at 350 when you're ready for them.

I usually make a big batch of tofu burgers and then freeze them. I can take them from the freezer to HOT in about a minute or two in the microwave. They're so much cheaper and better than store bought burgers.

sag: Mind sharing your recipe with me? Mine were pretty good, but I think they could have been better. I just played around with consistency, spices (I just used garlic powder, salt and black pepper for this batch), etc. I'm going to try other recipes in the future to see what I like best (I have a lentil burger recipe from Vegetarian Times' cookbook that looks really good).



And I completely agree about price!!! When I broke it down, the burgers were maybe 35 cents each, where an Amy's frozen burger would be 1.25 each and a Whole Foods one is EASILY 2 bucks. I'm trying to be much more frugal (buying dry beans, shelf tofu instead of expensive marinated tofu, etc.) and I easily go through burgers since I bring lunch every day.



I'd love to share recipes if you have any you recommend!

Lucretia--I got my recipe from www.savvyvegetarian.com You click on recipes, and it's in the tofu section. I usually add a bit more cumin and some minced garlic and ginger to the mix. They're really good and very easy.
