Brown sugar vs. regular sugar - VeggieBoards

Yup, I have another question. If a recipe calls for brown sugar and I don't have any, can I just use more cane sugar instead?

Sort of. Brown sugar provides moisture, acidity and flavour. Ideally, add a squirt of molasses (fancy or blackstrap) to the liquid ingredients to compensate (in addition to the sugar, of course). If there's baking soda in the recipe and no other acid you can discern, probably the recipe needs the brown sugar for acidity. If you don't have molasses, add a squirt of lemon juice or vinegar.
