i just created some awesome VEGAN double chocolate cookies (well mine were actually triple chocolate but...) and here is the recipe. my b/f thinks they are "more like candy than a cookie" but ate them up anyway. so here are dirtysole's dirty-lookin' cookies!



Cocoa Cloud Cookies

(because the cocoa puffed up in my face as i was mixing)



2 cups unbleached flour (or whole wheat but use more water!)

2 tsps aluminum-free baking powder

1/2 tsp.salt

vegan chocolate chips - put in as many as you like

½ c. cocoa powder

1½ cups vegan sugar

1/2 cup canola oil

1 teaspoon vanilla

1/2 cup water (more or less)



Directions:

Preheat oven to 350.

In a large bowl mix flour, baking powder, salt. Add chips. Make a well in the center and set aside.

In a medium size bowl mix sugar and oil well, then add the vanilla and water. Add the wet to the well in the dry and mix well. Add more chips if you need to. Spoon onto ungreased cookie sheets. These cookies do NOT spread, so make them the size you want them to be. Bake.



In my oven they take 11 minutes.

they will harden more while they cool so pull them out still a bit soft.



the reason mine were triple chocolate is because my mom just got back from a cruise in the "Spice Islands" and brought me a huge stick of pure chocolate so i grated some in!



i suppose i should also mention that the original recipe i based these off of i got off the internet somewhere awhile back but it is barely the same recipe now.

Can olive oil be used instead of canola oil...? I'm really dumb when it comes to cooking, but ... :P

you could use olive oil in the sense that, yes, the cookies would turn out fine and yummy.

the only thing about olive oil is that is has a distinct flavor that might change the flavor in the cookie a little. but i myself have been known to make this same substitution so i say go for it!

and never worry about asking questions, particularly to me about cooking because i love it.

These sound good. Maybe I'll vary them a little and leave out the chocolate chips, seeing as I don't have any. Man, chocolate cookies are my one weakness.

I didn't have any choc chips, so I put extra cocoa in. They are seriously edible.

The first tray I put in there was too much mixture in the heaps (I don't do cooking and never made cookies before) and they came out as muffins, but still really nice. The second tray is yummy and the third tray is the smallest heaps and is cooling now.

I'm on my own for a couple of days and oh dear supposing I eat the whole lot...

My goodness! They are so yummy!!!!! They don't have that kind of bland taste like lots of vegan recipes do. In fact, they taste like brownies...mmm...
