we are having people over for the weekend and want to make a good vegan dessert. Any ideas/recipies? i need something that doesnt take too long and fairly easy(i have 3 kids who like to help..too much)thanks

Hmmm... Quick and vegan huh? Are you up for baking? We've made a variety of yummy vegan desserts, but many of them are pretty time-consuming. I'm a big fan of cookies.

I made a really good one the other day.



Chocolate Pie



1 bag choc.chips

1 10 oz. silken tofu

1 prepared chocolate cookie crust( from Whole Foods, I forget what brand)



Blend tofu in food processor until smooth. Melt chips and add to tofu. Blend. Pour into crust and chill until firm.



I think I got the recipe from VegWeb. It is so easy and so good.



I have also made the cookies from ppk that cookingVeg suggested and they honestly were the best cookies I have ever had.

Chocolate covered fruit!



Get a bag of vegan semi sweet chocolate chips, melt them in the microwave (if you've not done this before, do it VERY SLOWLY, no more than 15-20 seconds at a time and stir, and repeat, because the chips will look solid when actually they're completely melted if you move 'em around), and then dip your favourite fruits. Some good ones are strawberries, banana slices, baby bananas, orange slices, apple slices, cherries, starfruit. Also good are graham crackers, sugar cookies, pretzels. Dust them with cocoa and powdered sugar when they're hardened.

The only things (other than the melting) that you need to remember are...

anything you're dipping must be completely dry

put them on sheets of wax paper (lightly sprayed with cooking spray if you can) until they are hardened

they will harden on the counter, or faster in the fridge.



People are SO impressed by this, and its really simple. Kids can definitely get dippin' and dustin' too. If your chocolate tempers funny and goes white, just roll the hardened choco fruit in cocoa. You could also use white chocolate...
