Anything with avocadoes in it

Also I love Tamagoyaki (non-vegan), it's basically sushi rolls made out of egg. Love em!

Sweet Potato Sushi

So - in light of our recent conversation, I decided I needed to make some Sweet Potato Sushi. It's got avocado and a few other surprise ingredients in it as well. The recipe is YUMMY if I say so myself!

Veggie sushi is one of my favorite things to eat, many people thing sushi is with raw fish but sushi actually means "with rice"

I must make avocado sushi!

I would also like to try it with strips of 'raw' marinated tofu, I think it would be excellent.

I've done something similar, rolled up sushi rice and nori (and other goodies) in a chickpea crepe. My whole (non veg) family liked them, with the best reaction from my 6 yo nephew: "These rollie-do's are the bestestest yummies everrrrrrr!"

...Hard to find just straight up veggie sushi around here sometimes. Even the Avacado rolls I found yesterday had imitation crab meat in the ingredient list

I opted out and went for the seaweed salad instead and it was awesome!

The first time I ever had sushi, I just had the cucumber rolls and they were so good. Honestly, I'd totally go for just veggie sushi next time I go.

The sushi place near me does a sweet potato tempura that's really good, although I'm not sure how vegan it is.

EDIT: You guys tempted me. I went to the mall to get stuff for dinner tonight and the sushi place had Avocado-Cucumber rolls so I indulged.

The quinoa is a good idea.

I make mine with a tiny bit of carrot, scallion and cream cheese in the middle. I don't like seaweed though, despite trying. I use either rice wraps or lettuce. Lettuce tastes good but is too messy.

I make a dip with mayo, vinegar, sugar, soy sauce and sriracha.

Yum your dip sounds great. Do you use any special vinegar?

Truly, it was not my idea. I grabbed a veggie sushi one day with a coworker at Walmart of all places. He swore it was really good, and it was. The sauce was really good.

It's something like this recipe, except I think I used rice vinegar instead of the lemon juice.
