This is so yummy...sounds weird, but don't the best foods always?
Carrot cake pudding:
2.5 oz carrot baby food (I am now a baby food addict!)
cinnamon, all spice, nutmeg, ground cloves, vanilla, cocoanut extract - to taste
sugar and salt to tast
1/4 a block of firm lite Mori Nui tofu
*Toss all in a blender and blenderize!* - I am going to try putting this in a ww pita at lunch with some chopped fresh carrot - will let you all know how it goes
Warm carrot cake soy milk:
1/2 cup of boiling vanilla soy milk
same stuff as above - minus the tofu
*add baby food and spices to boiling soy milk* (don't put the carrot in before you warm up the milk if you use a microwave - which I do - microwaves zap out the nutrients in veggies, I don't know about fruits ? anyone know if it does the smae to fruits?
