Recipe for a funeral or grieving family

Hi All...

My friend's father is likely going to lose his battle with heart disease today, I just learned. I do not know yet what the arrangements will be or if I will be asked to attend, but I am thinking I may offer to make some food for her, at the very least, maybe something she can put in the freezer. I'm concerned she is going to go through some depression over this (this is not here first big loss).

She is not a vegetarian or anything, but obviously I only cook veg (and nearly always Vegan, in fact). I'm drawing a blank on good, easy recipes right now - does anyone have a suggestion? Something that would be easy for a grieving person to eat without having to think too much about it?

Sorry to hear about your friend and her father. How about a pasta salad? That's easy, delicious, and forgive me, somewhat comforting. Or Mac and Cheese. There's a lot of veg*n recipes for that. I hope this helps. Good luck.

Since it's summer, make a batch of vegetable soup or a quinoa salad with fresh vegetables. They will likely receive a lot of food, so make something that will "go with" what ever else is brought in.

How about spaghetti? Just the noodles and sauce and maybe garlic bread. They can put it in the freezer if they don't need it right away.
