sweet corn and smoked paprika.

(barbecue sauce and salsa are good, too, and some vegan cheese like cheezly tastes foul imo but when it melts it's fab)

What's wrong with salt? When we make baked potato here in the house. We just rub the skin with salt, wrap them up in tinfoil and cook them. The salt crystallizes on the potato skin and taste really good.

 

If we top them, I just put ketchup on mine.

Personally a baked potato to me is a lazy man's mash potato. I tend to put vegan butter on it sometimes. Bust most of the time I like

These are the most usual easy fast stuff I put on a jacket spud:

 

Tinned sweetcorn - with a decent dob of dairy-free margarine

Tinned baked beans - UK style

Boston baked beans - homemade, US style from the freezer

Veggie Chilli (with red kidney beans, red and green peppers, sweetcorn, cocoa and bulgar wheat) - homemade from the freezer

Leftover veggie curry - homemade, any kind (on baked spuds is a great way to use up leftover curry!)

Tinned mushy peas - definitely UK (get them cheap as anything from ASDA without the copper colouring)

Fresh tomato and red onion salsa - AKA: finely chopped tomato and onion

Hummus

Scrambled tofu

Marge plus a pile of steamed spinach topped with nooch 

Devilled mushrooms - home spicy sauteed mushrooms, yum!

Ratatouille - most usually from a tin

Pepperonata - homemade tomato, garlic and sweet/bell pepper stew

 

PS: I  :smitten: baked potatoes!

I just had a baked potato a few minutes ago and happened to see this thread, lol! I had mine with a little spray oil, garlic powder, pepper, salt, hummus, salsa, nooch, jalepenos and to top it off, lots of sriracha! Yummly! Now to go lay down for a bit...

This is a fantastic idea...and it could potentially be built on with more time and money (like faux meat or seitan, brown gravy, mushroom, onions and a little A1).

I mixed a generous portion of torn fresh dill with Vegenaise, in a bowl to blend a sort of vegan "dill butter" ...and just added some salt and pepper. It was divine!

A-1 is vegan. So are Bacos. (posted ingredients a few minutes ago in cookie thread. Still.... yechh. LOL)

I'd vote for something like caramelized onions & mushrooms... or grilled/roasted veggies... maybe some garbonzos....


Urban Vegan posted ten ideas.... just get creative!

1- Sliced avocadoes, black beans, cumin, coriander and salsa [Tater Mexicana]
2- Vegan tapenade and nutritional yeast [aka, "nooch"]
3- Steamed cauliflower, cumin and garam masala [Deconstructed aloo gobhi]
4- Roasted red peppers, garlic and vegan cheese
5- Spinach sauteed in garlic and olive oil, nooch and plenty of fresh-ground black pepper
6- Leftovers! Think, crumbled-up veggie burgers, day-old stews, and casseroles that need pimping
7- Seitan, vegan gravy, fresh ground pepper, and peas [Comfort food]
8- Crumbled, steamed tempeh or Fakin' Bacon, olives, and olive oil
9- Chili [including Chocolate Chipotle Chili from my cookbook]
10- Asparagus with vegan Hollandaise Sauce

Try rubbing a little olive oil on the skin and bake right on the oven rack (sans tin foil). The skin gets crispy and delicious to eat with the rest of the baked potato!

my lastest fave is vegan mayo, a lot of nooch, garlic powder, and chives. Maybe a sprinkle of Baco's or salt

That's what I do, anyway. And you can buy or make vegan sour cream, and there are vegan cheeses on the market too, so you can look into that, too.
