I'm trying to plan a week of vegan dinners and could use some help/suggestions. This is for myself and my husband, no kids.
I'm aiming for fairly easy recipes and a vague inclusion of carbs, protein, fats, and veggies in each meal.
One thing I've noticed is I seem to be using lots of oil so I'm looking for recipes that don't require it, although most of these do...
meal 1 italian wonder pot (skip the cheese)
meal 2 lemon roasted potatoes
green beans (steamed, fresh)
meal 3 asparagus with balsamic tomatoes
SOMETHING CARBY? PROTEIN? WHAT WOULD YOU SUGGEST?
meal 4 giant bean salad (flavors of lemon, mustard)
SOMETHING- sliced tomatoes?
meal 5 minty cucumber quinoa salad
corn (basic fresh corn)
WONDERING IF THIS QUINOA SALAD SHOULD HAVE A DARKER VEGGIE WITH IT?
