I threw together Rice a Roni Spanish Rice on a burrito where I had cooked refried beans with Tofutti cream cheese, sautéed onion and diced canned green chiles. I topped sliced black olives and fresh avacado slices on a soft flour tortilla. Not exactly "homemade" but it all came together quite well...so well that a friend who is a lacto-ovo vegetarian, who is a confessed dairy addict, enjoyed a burrito, too.

I wanted to make healthy 'brownie bites' so I blended medjool dates, cocoa and oats in my food processor but then I was too lazy to form them into balls so I ended up eating it like brownie batter with a spoon. It's really good! It totally tastes like brownies.

I'm whipping up some gluten-free penne pasta with home made marinara sauce from our garden goodness with some added sauteed portobella mushrooms, onion, garlic, and black beans. I fix up several things weekly to deliver to my mom who is currently home bound. Surprisingly enough, she's been enjoying the vegan vittles, and her doctor is more than pleased with her greatly improved blood pressure readings. Yay!!!

My roommate got a large pack of those Lotus brown rice and millet, plain vegan ramen, so I boiled a nest with half a cube of Not Chkn, drained them, and tossed with sesame oil, Braggs liquid aminos, sesame seeds and chopped scallions. ..so yummy!

I also had a bagel thin, with Justin's hazelnut chocolate butter...it's totally vegan unlike Nutella, but a little pricey, so I was happy to buy a jar on sale today with a coupon.

I steamed beet greens, then mixed with sauteed mushrooms, onions, and peppers, garlic and ginger, with mixed grains and a drizzle of Braggs

Roasted Brussels sprouts, cauliflower, and slivered almonds in coconut oil and maple syrup, along with dried cranberries, onion, and couscous. Very little spice added, just a pinch of black pepper and garlic powder. I only used a hint of coconut oil and maple syrup, but it was enough for some awesome flavor!

Grapes (In this case green):

Buy the grapes (better still get someone else to get them for you)
Take them out of the bag
Wash them thoroughly under running water
Pat them dry
Put them in a bowl and enjoy them while looking at funny animal pics on this forum.

Leftover black bean spaghetti noodles tossed in with some melted soy free earth balance brand buttery spread, a generous amount of minced garlic, and a pinch or two each of some white pepper, cayenne, nutritional yeast, and dulse granules, served with a fresh green side salad topped with sun-dried tomato/smoked paprika/garlic dressing.

I am so excited I am about to go and cook vegan omlet with cashew cheese (some mix from cashnuts) packed with asparagous and spinach. Man this will be tasty... I just hope i dont fail at some ingredient since I am first time making this, hehe
