I had a leftover cupcake from this batch I made a couple days ago. They're just vanilla with a bit of lemon buttercream underneath the fondant. My first time using aquafaba! All vegan and all delicious.

Just finished half a gallon of chickpea veggie gumbo served with a bowl of coarsely diced cold cucumber, a 3 cm thick slice of a watermelon, a relish of leeks, yellow onion, fresh rosemary, and fresh lavender, along with a small bowl filled on one side with fresh diced spicy paprika and with red habaneros on the other side.
I'm almost full! :P

vegan scalloped potatoes. they were delicious. i sliced the potatoes thin using a food processor, and made a sauce of soymilk, flour, nutritional yeast, salt, pepper, paprika, onion, and earth balance. i added a handful of crushed toasted sesame seeds. baked at 350F for 1.5 hrs.

i had pasta shells with homemade sauce: i cooked garlic, onions, and green peppers in a little bit of olive oil, added tomatoes, olives, jalapeno peppers, oregano, basil, salt, pepper, lentils, nutritional yeast, some toasted sesame, and a little bit of sugar. superb!

Just finished a breakfast dish I used to make on weekends for my husband and I but haven't for a long time: hot cooked white rice (I precooked it last night), almond milk, unsweetened shredded coconut, maple syrup, raspberries, pecans, and banana.
