Pickled peaches!

I was watching the anime Spice and Wolf and they kept mentioning honey pickled peaches, so I had to see if it was a real thing. It turns out it was, so I made some (any sweetener can be used, not just honey). They were actually pretty good, tangy and sweet at the same time.

OMG I got a pack of beyond meat at whole foods....had a small strip just now since I couldn't resist. LEGIT. It has a bit more of a bland flavor than other mock meats, but I think that's why it's a hit, because it has the flavor of fried or roasted chicken off the bone (reminded me slightly of the dryness of turkey too)As I was eating I could definitely think of the peas kind of base used and how it actually works for the product. I don't know if it's my favorite mock meat but it definitely has it's own pros and potential.

Last night I made some penne pasta, with a garlic & beefsteak tomato sauce (bit of olive oil, lots of sliced garlic, tomatoes cut horizontally and cut side face down in the pan, lid on and pull the skins out after a 10-15 mins, and sea salt) then threw on top sauteed cubed eggplant, zucchini coins, heirloom cherry tomatoes, and kalamata olives with a ton of chopped parsley, which had been tossed with some lemon juice to zing it up a bit.

Delicious Thai food at a place very nearby with several vegan options because many of the dishes come with choice of meat which includes tofu (fried or steamed).

I had spring rolls, very delicate, and a stir fry with beautiful colorful fresh veggies, cashews, and pineapple with sweet and sour sauce and jasmine rice. I brought my omni daughter home the same dish as she was just getting off work, and she loved it too. Husband and son were with me and had vegan dishes with the steamed tofu. Sweet basil veggie stir fry; they were all lovely. Good value and nice service too and Thai pop music on the speakers. Fun time.

A stir fry with Wildwood Sprouted xtra firm tofu-really good and packs a nutrition punch!
Broccoli, peppers, onion mushrooms and fresh pineapple with a miso sauce thickened with cornstarch.
I was very proud that everything came out to the right, and veggies still crisp, and pineapple carmelized!

Tostada filled with black beans, farm fresh veggies like corn, red pepper, Jalapeño, cilantro, purple onion tomatoes and lime juice, maple syrup and olive oil dressing on a bed of romaine lettuce yummy!

Garbanzos and broccoli in a garlic and cardomon sauce - made with Better than Boullion and cornstarch.
Garlic and cardomon are now my favorite combination!

Anyone combine coconut and garlic? Doesn't seem like I've seen them paired, but it sounds ok
