I was looking at scratch tofu instructions and it seems pretty simple - soak the beans in a bunch of water, puree/blend, strain, add coagulant and press!

 

So I got to thinking, why not with other beans? Does anyone know if this is possible? I found this "shan tofu" recipe on the web.

All the links I have on soy-free tofu talk about Burmese tofu AKA shan tofu, so the same as you link to.  I've made black bean milk but never tried to coagulate it. I don't see why it wouldn't work.

 

EDIT: I take that back. Vegan Mommy Chef used white bean powder in this post.

Hey I linked that recipe1

I don't understand why it's compared with tofu, it's much more like polenta.

I made a very similair recipe years back, made just like polenta, and the same in texture.

I think it from a Food Network chef, like Nigella..

Wasn't called "tofu".

Hmm.  Yeah, I didn't know it was called "Shan tofu" either.

 

I call it panelle.
