Need some help from expert canners - VeggieBoards

Hi all,

 

I've canned a few times before with some people who knew what they were doing, but the other day I had to take the reigns as "expert" and  dropped the ball on several things. Soooooo I have a couple questions for anyone who uses mason jars...

 

Is it that big of a deal if you don't wash brand new mason jars with soapy water first? We boiled the **** outta them for 30 minutes before putting our cranberry sauce and chutney into them so I'm thinking they were as clean as possible... but still want to make sure...

 

RUST... a couple of the rings started to rust on the outside a couple days later. I'm assuming the seal is perfectly fine on the inside, and of course I will check when they are opened, but should I be concerned with this?

 

Lastly... I have been told you can push the seal in and out making that "popping" sound to make sure the lids are totally sealed. Most of our jars are not doing that. BUT... I also read that if you knock on the top with a spoon a couple times and it makes a hallow sound, you're good. Any truth to this? And more importantly...if we eat cranberry sauce from a jar that didn't seal properly a couple weeks later, will we die?

Soapy Water not specially, if the jar was greasy yes of course, otherwise i suppose you did clean it somehow anyway ? Boiling is mainly to disinfect.

 

Rust... i would just throw it away ( recycling ), not taking any risks here.

 

The spoon thing is for the gas, if any gas forms the sound will be different.

 

Not sure about your cranberry sauce, if you kept it in a fresh place rather than in the sun it could be ok, try it first you should know just by the taste if not by the smell, you can also check on someone that pissed you off as a reconciliation present, if they have a food intoxication it was no good, if they die you will soon have new neighbours :-)
