Cooked tofu in the fridge? I have a block of tofu that I am going to freeze, marinate and then bread and fry or bake, and I was wondering how long it will stay good after it has been cooked. Would it be better to thaw out just enough tofu for a few days; or to marinate all of it and just keep it in the marinade and not cook it until I'm ready to use it; or to cook all of it at once?

I'm the only one that is going to eat it, so I'm not sure how quickly that I will use it up...

It's best to eat cooked leftovers within 3-4 days. I've kept raw tofu in marinade up to a week but any longer than that and you should take the tofu out and boil the marinade to ward off any beasties. If you think it's going to be longer than a week, just thaw what you need.
