I've seen so many recipes for beet burgers (esp. the one from PPK). I'll definitely have to try them! I've been liking beets more and more lately!

Werewolf Gir, you just gave me a great idea with your picture on the Falafel Nachos. I've been struggling with breakfast ideas that are more protein-based (since I am swamped with students in the mornings, I really only have time to eat part of my breakfast and save the other part for later, so I'm always looking for protein rich ideas for the first part). I've been doing tofu scrambles, which are OK, but I'm getting a little bored of them and this week's tofu scramble did not turn out well at all (no flavor and very grainy texture). I never thought about the idea of making falafel for breakfast but it makes complete sense (also because I'm Middle Eastern, so falafel any time of day isn't a stretch for me ;). I'm not into fried foods, though, so I'll probably take the recipe you gave and bake them in the oven and add a little tahina sauce with them.

 

If they turn out well, I'll post them in the Food Porn 2 thread.

That sandwich with the pineapple relish gives me an idea. I have a jar of pineapple preserves in the cupboard. I bet those would go great with a spicy bbq seitan or tofu.

I've had something similar to that before! I went to a company BBQ once where the vegan option was mapo tofu on a bun but whatever recipe they used was definitely not traditional because it tasted kind of like tofu marinated in a sweet barbecue sauce with lots of pineapple chunks. It was really good, I've been meaning to try making something like that at home.

Oh, that sounds good too. I'm finding that I'm only liking tofu on sandwiches when it's fried. Otherwise, I prefer seitan on sandwiches because it has a better texture (and that's healthier than fried tofu).

By Heather Rampolla

Yield: 4 servings

Wrap Base:

Swiss chard leaves, or collard leaves

Veggies:

- 1 small purple cabbage (approximately 1 cup chopped)
- 3-4 small carrots, peeled
- 1 cup basil, packed

Marinade Sauce:

- 1 inch knob fresh ginger, peeled
- 1 clove garlic
- 2 tablespoons sesame oil
- 2 dates, pitted
- 1-2 tablespoons water
- pinch sea salt

Nut Pate Base:

- 1/2 small zucchini (approximately 1 cup chopped)
- 1 cup Brazil nuts
- 1 clove garlic
- 1 inch knob ginger
- 1 tablespoon sesame oil
- 1-2 dates, pitted
- pinch sea salt

1. Score the stem of large Swiss chard or collard leaves to use as the base of your wraps. This will allow you to roll up the wrap nicely. Set aside until ready to fill.

2. Slice cabbage into small cuts, peel carrots into thin strips and chop up the basil. Place all veggies into a large bowl. If you’re in a hurry, simply pulse in your food processor.

3. Blend the marinade sauce ingredients. Add into the veggies and stir. Let marinate for 10 minutes to soften the veggies.

4. Add the nut pate ingredients into your food processor and pulse until well incorporated.

5. Spoon out the nut pate on your wrap. Top with a spoonful of the marinated veggies.

6. Roll up tightly and cut in half if desired.

I'm making these (veganized) tonight and made the mistake of showing the photo to my husband and son. I'm now making a *bunch* of them at their request; I have plenty of nice sweet potatoes and avocados due to the farmers market visit yesterday.

.... So I'm roasting an obscene amount of sweet potato chunks and some sweet red pepper slices right now, a portion of which I suspect will be wolfed down before they make it into a tortilla. grin.gif
