I have half of a sliced zucchini, a bag of bread crumbs, and a ton of Field Roast sausage, just no recipe. I'm wanting a casserole, something free of bell peppers. Any suggestions? No soups or stews, it's wayyyyy too hot for that. Every recipe I'm finding has high amounts of dairy (cream soups, sour cream, lots of cheese). Preferably a vegan recipe, but a little dairy is okay. Thanks!!

I have kale, onions, every spice, and every type of oil on hand.
I'd bread the zuke and fry it, then fry the field roast. Sorry, not much of a recipe. I can be a simple guy some times. :)

You could make an onion sauce - use non-dairy milk.
Steam or saute the Kale & Courgette.
Toast or fry the breadcrumbs - mix grated cheese in once cooler if you like.
Slice the sausages.
Â
Then assemble in an over dish by putting a couple of layers of everything:Â
One layer Veg. One layer sausages. One layer sauce. Layer veg. Layer sausages. Layer sauce. Layer crumbs to finish.

Bake for half an hour to fortyfive mins.

I would make a zucchini type lasagna!
I ended up making spaghetti and layering the other stuff on top. It was okay. It reminded me why I hate spaghetti sauce and pasta so much.
Haha, it's a good thing we don't live together. I make spaghetti with pasta sauce like once a week at least

No, we would be fine as roommates. You'd make spaghetti and I'd make some delicious gourmet vegan meal that I would eat in front of you. You'd be super jealous, never buy spaghetti again, grab a plate and join me.
