Help: Fried yellow squash - VeggieBoards

My mom used to make fried yellow squash by peeling the squash, slicing it about this | | thick, dipping it in EGG then flour. I really miss eating it, and since I'm vegan now I can't. So my question is how can I make this without using egg????

My mom used to fry yellow squash in oil after dipping it in Jiffy Mix, which I think is not-vegan. But there may be a vegan alternative...cornmeal, maybe?

The egg is to make the flour/cornmeal/whatever stick, so that's the tough part...maybe a little oil? Some water?

Someone smarter than me should come reply to this, STAT.

I make that all the time with egg replacer instead of eggs.
