Over the past few weeks, I've become inexorably addicted to hummus. So far, I've had Athenos and Einstein's Bagel brands, and some lil company I picked up at Whole Foods. I can't go a day without the stuff now.

I think the next step will be making it on my own. Does anyone have experience with it that could recommend a recipe perhaps? I'm hoping it will go better than my ill-fated attempts into tofu preparation.

I get a can of chick peas, throw them in the food processor with a couple of table spoons of water. Add salt, pepper, a touch of garlic and onion powder (or you can use fresh garlic if you prefer). I then take this already prepared pesto that I found in the grocery store..I believe it's Mamma Russo's brand. I have 2 is sun-dried tomato and the other is basil-oregano. Very tasty indeed. Anyhow, I add a couple of spoonfulls of either or both, depending on my mood and mix it all up. You can add more water if it looks too thick. I don't really think you can mess up homemade hummus unless you add too much liquids.

I also cut up my own pita bread and bake it in the oven. You can season it up before hand. Brush it with a little olive oil first so that the seasonings stick to it. And if you want something sweet, season up the pita bread with cinnamon sugar before you bake it. Or pumpkin pie spice and sugar..mmmmmm!

Here's my recipe (from Claudia Roden)--it's pretty good and lemony. You can add more garlic if you like.

Hummus bi Tahina

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 1/4 cups chickpeas -- soaked in cold water overnight and drained

juice of 2-2 1/2 lemons -- or to taste

3 cloves garlic -- crushed


4 tablespoons tahina -- (sesame paste)

{(Optional) Rub the drained chickpeas with a tea towel too loosen the skins as best you can, then peel off and discard the skins. The hummus will taste about the same if you skip this step, but won't be as nice and smooth.}

Boil the drained chickpeas in fresh water for about 1 1/2 hours (less time if you've peeled the skins off; only 6 minutes at high pressure if you've peeled them and are cooking them in a pressure cooker), or until they are very soft. Drain reserving the cooking water. Blend to a puree in the food processor. Add the remaining ingredients and a little of the cooking water--enough to have a soft, creamy paste. Add more lemon juice, garlic, or salt if necessary.

Pour the cream into a flat dish and serve with Arab bread or pita.

Optional garnishes:

* Dribble 2 tablesppons extra-virgin olive oil mixed with 1 teaspoon paprika, and sprinkle on 2 tablesppons finely chopped flat-leaf parsley.

* Garnish with a good pinch of chili pepperand 1/2 teaspoon ground cumin, making a star pattern of alternating red and brown.

* Sprinkle with a few whole cooked chickpeas, put aside before blending.

* Sprinkle with ground sumac and a little chopped parsley.

I love hummus and this is the my favorite recipe:

15 oz / 430 g can of chick peas (garbanzos), strained

1/5 cup / 1.5 oz tahini (sesame seed paste)

1 clove garlic

1/2 - 1 t salt

1 fl oz / 30 ml lemon juice (about 1/2 of a med. sized lemon)

2.5 fl oz / 70 ml cold water

2-4 T olive oil (optional)

A pinch or two of dried or fresh parsley flakes (optional)

A few sprinkles of paprika (optional)

3-6 rounds of pita bread


Combine chick peas, tahini, garlic, salt, and lemon juice in a food processor. Process on high for 3 minutes, adding water as needed. Spoon out into a large dinner plate and spread evenly. Chill.

i've got a basic recipe, and some variations, at my site, in the snacks, dips and spreads section:

i love adding sundried tomatoes (that have been packed in oil), and/or roasted red peppers. pesto is also a delicious addition. yum yum! hummus is the food of the gods!

so what about the mixes you can buy, like the boxed stuff that you add water to or whatever. is it worthwhile, are they any good? my mom bought one when i was visiting one time and we never got a chance to use it, i was thinking we'd make it at easter, but if homemade is that easy maybe we'll do that instead and toss the boxed stuff in a food drive basket somewhere

i have never had a good "boxed" kind of hummus. it's usually chalky and never has enough garlic or lemon flavour.

Amen. I just made up a batch of this and it blows away all hummus I've ever had. The one change I made is substituting half the cumin powder for curry powder, and it turned out quite well.

I can't thank you enough for this recipe.

I just bought some vegetable hummus by I think Basha. I've had their Roasted Red Pepper before too. OMG, those are both awesome. I think they have a garlic too, but the veggie one has quite a bit already. It's yummmy!

I just take a can of chickpeas

with half the juice

1/2 lemon squeezed

1 tbsp tahini

2 cloves garlic, smashed

1/4 onion, chopped

Throw all in a food processor, if too dry add more juice from the can. Blend till as smooth as you can get it. Add salt and pepper to taste. Good!!

I make mine very similar to how greyhound girl does it. I usually add a generous amount of really good olive oil to mine, though. I make hummus once a week at least. I have a mini food processor that holds exactly 1 can of chickpeas...very handy.

I love the Roasted Red Pepper hummus made by Athenos. My attempts to make my own hummus have failed miserably, but I'm an official Kitchen Klutz, so that's not surprising, hehe. ^^;; I'm craving a cucumber and hummus sandwich. *licks lips*

Hummus has become my 'meat and potatoes' LoL! I also can't go a day w/o it. I put Hummus on and in everything ..really!

I posted a great hummus salad dressing a few days ago here!

my tried and true recipe is as follows

drain and rinse one can of chick peas

put in blender

add some extra virgin olive oil about 1/3 of the way up the depth of chick peas

add 1 tbsp lemon juice

1 tsp cumin

1 tsp coriander

some pepper

some onion powder

some garlic powder

some chili powder

(most of the flavoring can be adjusted depending on your taste) lately I have been using fresh garlic and just use one clove

sometimes I add a touch of filtered water if the blender doesn't puree it well enough.

I like to top mine with cilantro, parsley and some finely chopped onion
