I'm debating on taking this challenge for the month of March. The only things I can see myself possibly struggling with on this challenge are cheese (I'm from WI. I love cheese) although I don't it it very often even now because it makes me very congested. Also, eggs. I don't eat yolks, but I do like a good egg white scramble now and then.
Advice? Encouragement? Recipes? Anything?
P.S. I'm also on a tight budget, in case that contributes.
