I have a pita recepie for a bread machine, but you can make it as conventional dough and let it rise.
1 1/8C water
1 TBSP sugar
1 tsp salt
3 C flour
1 1/2 tsp yeast
Use dough cycle (or make and let rise)
Preheat oven to 500* (very important to have a hot oven)
divide dough into 8 pieces
flatten by hand to 6"
place on greased baking sheets, cover and let rise 30 min.
Brush with olive oil and bake 8-10 min.
These turn out really well. When they come out of the oven, put them in a brown bag, this will keep them warm and soft.
