How to replace coconut oil in vegan cupcakes? - VeggieBoards

Calling all experienced vegan bakers!

I want to do some baking this week, and I want to make lime and coconut cake, but in the ingrediants is coconut oil - should I pick another recipe, or is it easy to exchange for either normal oil or soya margerine?

They tell you to "melt" the oil, so I presume it's the soild stuff I have seen for the price of GOLD in the health food shop Has anyone tried this recipe without it?

I was surprised to find very affordable coconut oil at Food Lion (low price neighborhood grocery store). It's LouAna brand. Some Walmarts carry it, too.

Anyway, as far as a substitution, I'd go for whatever oil you can get your hands on that has the highest level of saturated fat.

Or, shortening would work well, too. (hydrogenated shortening is vegan and cheap, but its SO bad for you!)

It doesn't take much to "melt" coconut oil.
It's 90 degrees F in my house right now, and all my coconut oil is liquid.
In the wintertime, my home gets down to 40F and 50F, and I have to chisel the oil out with a screwdriver... it still melts in seconds on the stove, or in my hand.

you can sub the same amt of liquid oil if you want. Some bakers are all about their coconut oil. As far as the actual baking, there's no difference. Use what you have.

If you're making the Coconut Lime cupcakes out of Vegan Cupcakes Take Over The World -- you can sub canola oil.

You can definitely substitute any other neutral-tasting oil. I'm assuming what you found was raw virgin coconut oil, which can indeed be quite pricey. You can, however, get perfectly good refined coconut oil in any supermarket or Asian shop - it should cost less than 2 quid for a big jar. I get mine from Sainsburys. It's very easy to melt in a microwave if needed.

Yeah it is the coconut lime cupcakes, and that's good that I can use oil I have never cooked with it before so I wasn't sure.

Ahh okay, yeah I've only ever seen it in a HFS where it was about £10 for a (small!) tub - I was looking to buy some and I changed my mind pretty quickly! I will check out sainsburys today as I'm going shopping just to see, but will probally use sunflower which is what I usually use, as it's cheap and I'm only baking for me.

I only pay like 8 bux for raw virgin coconut oil.
