I'll be staying in a hotel for three days and I'd like to avoid eating out as much as possible. I'll have access to a coffee pot but no refrigerator or microwave. I'll be taking some snack food (granola bars, nuts, dried fruit, juice boxes and soy milk boxes) but I'd like some more substantial foods, too.

My ideas so far:
Bagels and peanut butter
Cup noodles
Rice balls (filled with carrots, tempeh, and avocado)
Pasta salad with beans
Oatmeal

Any other suggestions?

I realize that I take things too far... but last time I was in that kind of a situation (I did have a refrigerator), I brought a small rice cooker along with me and cooked in it. Is something like that an option?

If not, you can still get away with making pasta (just boil water and add it to pasta in a covered container... when the water gets lukewarm, drain and repeat until pasta is soft).

Haha, I've totally taken a rice cooker before! This time I'm not driving my own car so I'm trying to keep my luggage to a minimum. My rice cooker is a 10-cup one, so it's pretty large.

Nice! I have a 4 cup one but it would still be sorta bulky to trek around.

How about quinoa? Same thing as with the pasta but it should cook faster.

Threads like this always freak me out. Cooked pasta, rice, and couscous really should be refrigerated, otherwise you risk bacterial growth--the food won't necessarily smell or taste off, but could still make you sick. Rice in particular is bad for this because of the bacteria Bacillus cereus. If you want to bring some instant noodles or make a small amount of couscous at a time (could be made with coffee pot hot water), that would be safe.
