I see great recipes for cashew cheese and even made vegan truffles with cashews, but why do people use cashews? Is there something bad about using other nuts?

I'm not sure; perhaps it's easier to make "cheese" from cashews than from other nuts.

I've had cashew cheese in the meals I've ordered in vegan restaurants, and it's just lovely.

Cashews are super creamy. You totally could sub other nuts if you wanted to but the texture would be different.

yeah, cashews are very creamy, and mild flavored, especially when you soak them.

Fat content. Cashew milk is often called cashew cream. Nondairy ice cream is often made using soy creamer or cashew milk to boost the 'creamy' factor.

I've seen cheese made with others. Sunflower seed cheees, almond cheese, pine nut cheese, macadamia cheese...

I have seen a lot of cashew, almond and sunflower cheese. I have had sunflower and cashew cheese and both were KILLER! MMMM. now I have a craving, thanks

i've made cashew, macadamia, and pine nut cheezes depending on the recipe. i'm totally avoiding macadamia nut cheeze recipes because it is soooo freaking expensive.

I have had cheese made from cashews and from macadamia nuts. The macadamia was more coarse and I didn't enjoy it as much. The cashew cheese had a much more cheese like texture and tasted richer.
