all this cookie talk inspired me to make a vegan version of what used to be a favourite of mine!

Mexican Wedding Cookies

aka "Sandies"

4 cups unbleached flour

2 cups Earth Balance

1 cup walnut crumbs

1/2 cup confectioner's/powdered/icing sugar

2 tsp vanilla extract

1/2 tsp salt

more powdered sugar for dusting the cookies with

Preheat your oven to 325 F. In a large bowl, mix the flour, walnut crumbs and salt. In a seperate large bowl, cream the margarine and 1/2 cup of powdered sugar together, then beat in the vanilla extract. Stir the flour/walnut mixture into the marg/sugar/vanilla in three parts, making sure it is well-mixed. Form the dough into walnut-sized balls and place on an ungreased baking sheet. Bake for 12-15 minutes, until the bottoms of the cookies are just turning golden. Remove from the oven and sprinkle liberally with more powdered sugar, then let cool on the baking sheet.

Makes about 32 cookies.

Yum, Kreeli! My paternal grandmother used to make this cookie, but without the salt. I also think she added a tiny bit more powdered sugar, and they were called "Russian Tea Cakes." Hmm...I think I'll make some of these to take to my dad on the 14th, since these are his favorite cookie. Nice and rich.
