When you say low carb, do you mean higher glycemic carbs like bread & rice and stuff? Or carbs in general, including vegetables?

Bok choy, bean sprouts, scallions, mushrooms and tofu stir fry perhaps with low sodium soy sauce? You can add some red and yellow peppers in for color...

not sure what else to serve with it though...hmmm.

It's a total bummer he doesn't like Indian food. I can think of a bunch of Indian food that would fit the bill. With bases of tomato and beans and spinach and such, and all the spices, you don't even miss the salt or 'bad' carbs.

I'm thinking, but, man, it's hard. I'm craving Indian food something fierce so it's hard. :

I guess I would do something like sauteed veggies with pan-fried tofu in a Chinese sauce that you make (so it can be low salt).

I'd do that because I did it the other day, and it was SO yummy. (I posted it in Food Porn here, btw.)

While it's come to my attention men don't care as much as women do about presentation, it's hard to make a hearty, filling soup look stellar in a bowl. Cooking for the first time for the guy you've been dating is kinda a big deal. At least, it would be for me! And I'd want it to LOOK awesome as well as taste awesome. I'd stay away from soup.
