Here is a recipe for the best chocolate cake ever (vegan or otherwise). I know the vinegar sounds kind of wierd, but seriously, this cake is SO good. No one has ever guessed that it was vegan. And it is easy to make, too!
1 1/2 cups sifted unbleached flour
1 cup unrefined sugar
3 T cocoa
1 tsp. baking soda
1/2 tsp. salt
6 T canola oil
1 T white vinegar
1 tsp. vanilla
1 cup cold water
Sift flour, sugar, cocoa, baking soda & salt into large bowl. Make 3 holes in sifted ingredients. Pour oil into one, vinegar into second, and vanilla into third. Pour cold water over all and stir with whisk until well blended. Pour into 8" square pan and bake at 350 for apporximately 25-30 minutes. Do not wait until sides pull back from pan or it will burn.
I usually frost it with a basic vegan version of buttercream frosting:
1/4 cup margarine
2 1/4 cups powdered sugar
2 tbsp soy milk
1 tsp vanilla
Mix together margarine and 1 cup of powdered sugar with an electric whisk. Add remaining sugar a little at a time, alternating with some milk. Mix until smooth and then stir in vanilla.
