Tomato Paste Substitute in Seitan - VeggieBoards

I have a recipe I've been using for a long time for seitan, but I want to switch out the Tomato Paste for something else. Any idea what the tomato paste does in the recipe? Thanks.

It's probably there for flavor or as a binder. It may be too dry without. I asked in the slut thread, but what flavors do you like?

I took your suggestion from the Slut thread, Liz... tried BBQ sauce and a little extra liquid. My seitan log is in the oven, hope it tastes good *fingers crossed* It was the right consistency.



I almost tried ketchup, but I'm trying to get away from the tomato-y flavor. I know BBQ sauce is made of tomatoes, but the flavor is really different. I may try ketchup next time if the BBQ sauce doesn't taste good

Really any kind of thick paste would have worked as a substitute. I think you actually could have done without it and just added a teaspoon of extra liquid. Seitan tends to be pretty forgiving on exact measurements. As long as the amounts are somewhere in the called for ballpark, it will cook up the same.



Mustard would probably be good in its place with those other ingredients.
