So here's my question: In small amounts, such as a gluten free loaf of bread, you can use xanthan gum in place of vital wheat gluten, so it got my brain sparking, why couldn't one make a xanthan gum-based seitan?

Well, before I try it, I was wondering if anyone has or knows of an experience with it. Is it possible, or is it really only interchangeable in small amounts?

Not sure why'd you'd want to go that route when there are other gluten free subs like TVP, tofu and nut/bean loafs around....

But here's someone who uses xantham gum as a binder to make veggie chorizo. Looks interesting!
