Hi everyone. This looks like such a great board, and I'm looking forward to learning a lot here. I've become a vegetarian quite by accident and really know very little about it. My problem right now is getting enough protein into my diet. I've lost a tremendous amount of weight and my hair is falling out by the handfuls due to surgery and lack of nutrition.
I don't have much to contribute at this point so I'll be lurking a lot. I would like to share my favorite meal with you though.
cooked whole wheat orzo
blanched tomatos, skinned or a can of diced tomato's with juice
juice of one lemon
2-3 grated cloves of garlic
a few liberal dashes of EVOO
cubed Feta cheese.
Just mix it all together and make it as soupy as you want. Yum!
