Howdy, folks! I'm Jen - longtime lurker, first-time poster.
I have been a vegetarian for a while and recently gave up dairy and eggs (about two months ago).
My husband has been on the same path, which makes it SO much easier to make such a drastic change. He's been a real trooper.
We live in Southern California's Inland Empire. We're in our 30's.
We're into offroad racing, music, and I love to cook (he loves to eat).
I've spent a lot of time on Yahoo Answers' Vegetarian & Vegan section.
I am always reading threads over here on the Veggie Boards and thought it was high time I register.
I've made the transition from vegetarian to strict vegetarian pretty easily, but after I increased my soy intake tremendously (soy cheese, soy milk. soy ice cream - soy soy soy every day many times a day) I discovered I was having some unhealthy reactions to soy products so I have pretty much cut those things our of my diet completely, too (maybe a dash of dressing here and there and some Earth Balance on occasion). This has made things a little more complicated, but I'm staying positive. It's forcing me to prepare more whole foods and this is right in line with where I wanted to go anyway, so, it's all good.
There is no going back. I will never consume animal products again.
I'm interested in continuing to learn more from you all and in being more involved in the conversations that go on here. This place is a great resource and I'm really happy to officially be a part of it!
