Your family might enjoy meatless dishes that are similar to their current favorite dishes. Burritos, soup, pasta, and tacos can all be made meatless. It's very likely that your supermarket carries vegetarian burger patties (Boca is a good brand), which can minced and used in these dishes. Burritos and pasta are also good with canned vegetarian chili mixed in - you can find veggie chili located next to the meat chili at your grocery store. You can make a hearty meatless soup by adding boiled lentils to any vegetable soup.
