Hi, I was a member of veggie boards about 5 years ago, couldn't remember my info so I made a new account. I have been a vegetarian for 20 years and am very interested in vegan options and use them often though not strictly. I try to live a mostly vegan lifestyle. I went from being a homeschooling stay at home mom to being a single working mom, so needless to say meals have been an issue and have been less vegan than I would like. I would love to read up on some easy kid-friendly vegan foods.

I was a stay at home, unschooling mom (and PT writer) back in the day. Now I'm a single FT working mom too. Meals are harder when you've got all the kid responsibility and work on top of house cleaning and so on.

I don't know how old your kid/s are, but mine is almost 12 so he's been learning to cook for a while now. That helps. Even if he does little stuff like slicing veggies or fruit, it's still stuff I don't have to do.

Also make ahead stuff is your friend - homemade veggie burgers are easy to freeze as is pasta sauce. We also keep a lot of easy stuff on hand for more busy than normal times (i.e. can veggie soup, sandwich fixings, etc) I don't love stuff like canned soup all the time, but it saves you when you're tired.
