Cashew cheese from cashew butter - VeggieBoards

Can you use cashew butter to make cashew cheese? I don't know if they are raw or not. The package just says cashews under ingredients. It's a deli type container, so there isn't really much information on the package.
It was on clearance for 1/2 price at a local health food store, so I thought I would give it a try. The other thing is that I got it over a week ago (and forgot I had it) and the sell by date was 8/23. It has been refrigerated and unopened since I got it, so is it still usable?

If the ingredients are cashews then they probably just took some soaked cashews and put them in a food processor or blender until it was creamy. The soaked cashews come out creamier than the non-soaked ones, but it can be done without soaking them. I use a similar recipe all the time but add some stuff to make 'nacho' cheese. It's great for dipping raw chips or veggies or getting some curly kale and breaking off pieces, covering it in the dip, then dehydrating until crispy. It makes a great snack!

Nacho Cheese Dip

1/2 red bell pepper
1/4 cup water
1 cup raw cashews (soaked for 2 hours - optional)
1 tablespoon raw tahini (optional)
2 tablespoons nutritional yeast (gives it the cheesy flavor)
1.5 teaspoons sea salt
2 teaspoons onion powder
1 clove garlic
2 tablespoons lemon juice

Directions: blend all ingredients together until creamy. add a little water if too thick.

They are probably not raw. I've yet to see a store that sold raw almonds or cashews. They might say "raw" but they are really pasteurized and are allowed to be called "raw". It's best to buy them from trustful local markets and the internet, but they are pricey.
