Hi, all!
I've recently gotten into the habit of drinking a smoothie every day. Here are two of my favorites that I've created, they are 100% vegan:
Papaya Green Smoothie
- 1/4 papaya, seeds scooped out
- 1 handful of kale
- 1 handful of red chard
- 4 strawberries
- 1 banana
- 1 tbsp coconut oil
- 1.5-2 cups unsweetened coconut milk
- 1 tbsp chia seeds
Blend together and enjoy! I have an old blender so I add in the ingredients in batches and blend so I don't overwork the poor thing, haha. Makes 2 servings so you can share with a friend or save for later.
Yummy!! And so good for you! Has healthy fats, omega-3's, calcium, B12 (if you buy the right coconut milk) and every color of the rainbow except blue/purple, haha.
Post-Workout Power Milkshake
- Some ice cubes (Maybe 4-5)
- 1 cup almond or coconut milk
- 2 tbsp peanut butter (almond butter could work as well but I haven't tried it yet)
- 1 tbsp coconut oil
- 1 tbsp chia seeds
- 1 banana
Again, blend! I always blend the ice cubes alone first, then add in the rest, but again I have an old blender, haha. This smoothie is always a great pick-me-up for me after I'm feeling exhausted from a hard workout.
