Mother's Day potluck? - VeggieBoards

My husband and I are going to his dad and step-mom's house for a mother's day get together this weekend. We want to bring a dish to share, partly to make it easier on his dad (the family is very meat and potatoes) and partly to make sure we have something to eat (the family is very meat and potatoes).

 

Does anyone have any suggestions of a dish we could take that is a bit of a crowd pleaser (so we can share with everyone) and is fairly filling (in case their aren't many veg/vegan options there)?

Turn these into this.  You can't go wrong with enchiladas. You also might bring a salad like this one. Oh, and dessert...Let's see...Mother's Day dessert...Hmmmmm...I'd go with something like this. :lick::drool:
