This is a recipe I use and love. It doesn't have the weird colored fruit, but it's dense, moist and spicy. It says to make it as cupcakes, but I make it in a loaf pan.
Poor Man's Fruitcake
1 stick of EB
1 C sugar
1 Cup raisins (or 1/2 raisins, 1/2 dried cranberries)
1 cup water
1 teaspoon cinnamon
1 teaspoon nutmeg
1/8 teaspoon ground cloves
1 3/4 cup flour
1 teaspoon bakign soda
1/2 cup chopped pecans or walnuts
Preheat to 375. In a saucepan, combine margarine, sugar, raisins, water, cinnamon, nutmeg and cloves. Bring to a good boil and then let cool. When cool, stir in flour, soda and nuts. Line cupcake pan with paper liners and fill. Bake for 25-30 minutes. Can also be made in a greased and floured loaf pan. Bake about 40-45 minutes or until a toothpick inserted has only moist crumbs.
