I got these egg substitutes from La Dolce Vegan. For each egg in the recipe, you can substitute one of the following:
1/4 cup of blended soft tofu
2 tbsp ground flax seed mixed with 3 tbsp water
1/2 a banana, mashed
3 tbsp applesauce
The last 2 will change the flavour of your recipe, so only use them if banana or apple flavour will go well in your cookies.
I've had great luck with tofu, I generally use it more than Ener-G
