Egg substitute?? - VeggieBoards

Is there anything I can use as an egg replacer besides EnerG Egg Replacer? My local grocery store doesn't carry that brand. I made vegan cookies for the SuperBowl yesterday and when I woke up this morning it seems as though the fam took a liking to my baking and there's only a few left!! I can still make brownies but I can't find a recipe without eggs and I don't know what else to use!! Help! Thanks!! Peace & Love!!

Ground flax



Mashed banana or applesauce or plums/prunes (esp. with chocolate)



More baking soda/powder and some vinegar



All these things work. There are so many threads on this topic. Ill see what I can find.

I got these egg substitutes from La Dolce Vegan. For each egg in the recipe, you can substitute one of the following:



1/4 cup of blended soft tofu

2 tbsp ground flax seed mixed with 3 tbsp water

1/2 a banana, mashed

3 tbsp applesauce



The last 2 will change the flavour of your recipe, so only use them if banana or apple flavour will go well in your cookies.



I've had great luck with tofu, I generally use it more than Ener-G

I use tofu a lot as well. I really like EnerG egg replacer, though.

Thank you guys SO much!! You rock!! Sorry I didn't do a search on this first!! I'm on the way out the door to go to weigh-in and I wanted to stop at the store on the way back!! Hey Nickle,

You can order the EnerG egg replacer from VeganEssentials, the website that you go to if you click on the the third link down from the top of the forum list. That won't help you today, but VeganEssentials is great for ordering things your supermarket doesn't carry.

It's 1 tbsp ground flax + 3tbsp water... and it also has a sort of nutty flavor that does not lend itself well to all recipes.

1/4 cup mashed banana - to be more specific... bananas are all different sizes.

I'm making vegan cupcake for my bfs birthday party tonight... I'm not going to tell anyone though until after the party I was already using vegan margarine, so I figured... why not just substitute the eggs? I used applesauce (bfs request when given the options). I hope it turns out great! My Mom's #1 complaint about the non-boxed stuff is it's not "fluffy enough." This should do the trick!

Quick update... my family loved the cupcakes and how moist they were! My sister even said they were the best vegan food I had prepared for them.

I usually use veg oil and water in cakes etc... seems to work for me lol.

I usually just add extra baking powder in with the "butter"/sugar blend, before I add anything else. I can't give you an exact amount, though! Sometimes I use a bit of applesauce also, but usually just plain old baking powder.
